     Four years ago this month, I became a vegan.  That lasted for about six months until I downgraded to vegetarian for 2 1/2 years, and then abruptly fell off the meatless bandwagon.  I imagine most meat-free eaters progress in the opposite direction (omnivore —> vegetarian —> vegan), but you can’t rebel if you’re moving with the crowd, right?  ;-)

     The reasons behind my venture into vegetarianism never changed, though I may have been seduced by the siren song of crispy bacon over the past year.  Vegetarian diets that emphasize whole, fresh foods are healthier and more environmentally friendly than your average (terrible) American diet, and they are mighty tasty, too.  

     As someone with the unfortunate habit of bookmarking delicious but complicated looking recipes that I almost never take the time to make, I appreciated these simple vegan options supplied by Mark Bittman.  I have no doubt they’ll help make my recent jump back into the vegetarianism easy and satisfying, and maybe they’ll come in handy to you, too!
